I love Saturdays!


There is something magical about Saturday morning.

When you wake up, you have the entire weekend in front of you.

I just love it!

Saturday is usually my rest day, so I like to do a whole lot of nothing.

I love to get hydrated (gotta love Nuun) and read for a few hours.

I think my cats know that it is a rest day, because they are normally pretty lazy too.

iceI also like to ice my ailments and watch movies (yep, I’m still rockin’ the KT Tape).

I also like to cook a lot and eat good food.

If you haven’t tried PB2, you should. It’s awesome!

I also like to roast vegetables.

I found a few recipes on Stuft Mama’s blog and but have since perfected a few recipes of my own.

slawThis is broccoli slaw.

One of my favorite things to roast.

Olive oil spray, garlic powder, nutritional yeast, pepper and salt and roast  for 20 minutes at 425 degrees…

 and throw it in with some soup.

This is my famous not famous quinoa, black bean and chicken soup with some salsa, a little cottage cheese and green salsa on top.

Here is where the magic happens…

I mixed in the roasted broccoli slaw!

carrotsI also like to roast kale and carrots!

fiberfulThis is my favorite fiber bar from Trader Joe’s. If you haven’t tried this too, you should try it. It’s good.

Some times on Saturdays, I clean…

cabinetand I discover that I have ENTIRELY too many water bottles.

Where did they all come from?!?!

Anyway, that is pretty much my Saturday in a nutshell. It is boring, but restful!

    Sounds like the perfect Saturday! For me, Saturdays are long run days so no lying about. Even when sometimes it seems like the most tempting thing in the world…

    I also cook a lot and eat too much on the weekends. :p

    Sounds like a fantastic way to spend the Saturday. Mine are usually like yours – on the lazier side and filled with good food but yesterday was an exception (lost my car keys after volunteering at a race). Today will be my day to laze about.

    The perfect mix of lazy and productive! Normally I’ve got lots going on on Saturdays, and today was no exception. Yoga, working at the ER, then a violin lesson. And then I had to try and get some errands done (and by errands I mean bake cookies for a school bake sale haha). Have a good rest of your weekend!

    I absolutely LOVE Saturdays too!! LOVE your blanket!! Too cute! I usually run and then do pretty much everything you just mentioned… watch tv, cook/bake, read, relax 🙂 I made the hummingbird muffins from the Runner’s World Magazine this weekend! So yummy! 🙂
